Salsa de Molcajete (Stone-ground Mexican Salsa) is a traditional Mexican recipe for a classic salsa made from roasted chillies, plum tomatoes, spring onions, garlic and dried oregano that are pounded together in a granite mortar. Salsa de molcajete is a rustic Mexican salsa traditionally made by crushing roasted ingredients in a granite mortar called a molcajete.
Ingredients:
6 güero chillies (or use serranos or jalapeños)
2 Roma (plum) tomatoes
3 spring onions, diced (trim off about 10cm of the greens)
2 garlic cloves
½ tsp dried oregano
1 tsp salt (or to taste)
Method:
Roast the chillies and tomatoes over an open flame or on a comal (a flat pan) until blistered and soft. Transfer the fruit to a plastic bag, seal and set aside to sweat and cool for 15 minutes. At this point peel the chillies and tomatoes.
Wet the molcajete with a splash of water (about 2 tbsp) then add the garlic and mash with the pestle. Next add and mash in the chillies, followed by the tomatoes.
Mix in the spring onion, coriander and salt. Taste and adjust the salt if necessary.
