The combination of sweet mango and spicy jalapeño in this delicious salsa de mango provides a flavorful complement to tortilla chips, fresh seafood, pork, and chicken dishes.
Ingredients:
2 mangos peeled and flesh cubed, (mangos should be ripe, but still firm)
3 jalapeños diced, or 2 serrano chillies for more heat
½ small red onion, diced
½ bunch fresh coriander. minced
3 tbsp vinegar (white distilled or red wine vinegar will work)
juice of 1 orange
½ teaspoon salt (or to taste)
Method:
Mix together the cubed mango, diced chilli and red onion in a serving bowl. Scatter over the coriander and toss to combine. Drizzle over the vinegar and orange juice then toss to coat.
