Salade de tripes (Tripe Salad) is a traditional Chadian recipe for a classic dish of boiled tripe served with cucumber, onion, tomato, bell pepper and lemon wedges. The full recipe is presented here and I hope you enjoy this classic Chadian version of: Tripe Salad (Salade de tripes).

This salad is is also known as marara (the word for prepared tripe) in Chad.
Ingredients:
300g marara (prepared tripe)
1 lemon
1 onion
1 tomato
1/2 cucumber
100g bell pepper (red, green or yellow)
salt and freshly-ground black pepper, to taste
Maggi aroma, to taste
2 tbsp olive oil
Method:
Slice the cucumber, onion, tomato, bell pepper and lemon into wedges or bite-sized pieces then season with salt, black pepper and Maggi Aroma. Add the olive oil and toss to combine. Set aside in the refrigerator to chill as you prepare the tripe.
Bring 1l water to a boil. Wash the tripe and add to the pan and boil for 3 minutes.
Drain the trips and slice into bite-sized pieces. Toss with the salad ingredients and serve.
