Just to show how easily carlin peas can be substituted for chickpeas, here’s a recipe for oven-roasted spiced carlin peas to be served as a snack. You start with cooked beans in this recipe and you can used tinned or jarred beans. If you’re starting from dried beans, soak them in plenty of water over night then drain, rinse, set in a saucepan, cover with water then bring to a boil, reduce to a simmer and cook for about 45 minutes, or until tender. About 110g dried beans will yield 250g cooked beans.
The night before, put the carlin peas in a large bowl, cover with plenty of water and set aside to soak over night.
The following day, drain the carlin peas, set in a saucepan and cover with water.
Bring to a boil, reduce to a simmer and cook for about 50 minutes, or until fully tender. Drain the carlin peas in a colander and set aside to cool.
In the meantime, pre-heat your oven to 200°C.
Put the cooked and cooled carlin peas in a bowl and toss with the oil then scatter over and toss with the spices, herbs and salt.
Turn out onto a non-stick baking tray, set in the centre of your pre-heated oven and bake for 20 minutes, shaking the tray halfway through. They’ll turn crisp and nutty — essentially a Northern twist on roasted chickpeas.
