Ghanaian Ripe Plantain Ice Cream is a traditional Ghanaian recipe for an ice cream made from a blend of ripe plantains, coconut milk, evaporated milk and condensed milk flavoured with cinnamon. Peel the plantains, then chop into a pan. Add water to cover, bring to a simmer and cook for 5-8 minutes until tender. Remove the plantain pieces to a bowl with a slotted spoon and set aside to cool completely.
Turn into a blender then add the coconut milk, evaporated milk, condensed milk along with the salt, water and milk powder,
Process everything until smooth then strain the mixture through a fine-meshed sieve into a bowl.
Divide the mixture between 9 plastic cups. Add a wooden stick to each cup (so you can hold the ice lollies) then transfer to your freezer and freeze for 12-24 hours, until solid.
To serve, remove the ice lolly from the freezer, dip briefly in a bowl of warm water then grab hold of the stick and remove from the plastic cup.
