Method:

Lay the bread slices out on your work surface then spread one side of each with the butter. Turn the bread over and spread the other side evenly with the thousand island dressing. Take half the bread slices and lay the corned beef slices on top of the dressing, ensuring that there's no overhang. Spread the sauerkraut evenly over the corned beef then sprinkle the cheese on top.

Top with the remaining bread slice, ensuring that the buttered side stays outside. Press to compact the sandwich then heat a non-stick frying pan or griddle until hot. Place the sandwich on the griddle and cook, pressing down on the sandwich three or four times to keep them compact until golden (about 3 to 4 minutes). Carefully turn the sandwich over and cook and press down again until the cheese has melted and the sandwich is golden on the other side. Slice and serve immediately.
