This recipe comes from a 1950s French cookery book for game and fowl. Little information is supplied apart from how to make the sauce and what to serve it with. But the ingredients suggest an Anglo-Indian origin.

Ingredients:

3 tbsp lard
1/2 tbsp Dijon mustard
3 tsp paprika
2 garlic cloves, crushed
1 tsp brown sugar
2 tbsp lemon juice
1 onion, finely minced
2 tsp Worcestershire sauce
2 tbsp tomato paste
1 tbsp vinegar
salt, to taste

Method:

Mix all the ingredients together and serve with strongly-flavoured fowl or game.
