Okra Relish

This is a classic relish made from okra that derives from the island of Zanzibar, Tanzania, East Africa.

Ingredients:

200g onions, peeled and sliced into rings
200g onions, peeled and chopped
4 garlic cloves, chopped
2 hot chillies, finely chopped
6cm length of ginger, peeled and grated
1.8kg fresh okra, stems removed
2 fresh tomatoes, seeded and sliced into thin strips
4 tbsp groundnut oil

Method:

Heat the oil in a large frying pan, add the sliced onion and fry for about 8 minutes or until golden brown. Now add the fried onions, garlic, chillies and ginger. Fry for 1 minute more then add the whole okra.

Continue frying, stirring frequently, for 10 minutes then add the tomato slices. Fry for 5 minutes more, or until all the ingredients are piping hot through.

Take off the heat and immediately pack the relish into two large jars that have been sterilized and warmed in the oven.

Seal securely and allow to cool. Label and store for at least 4 weeks in a cool, dark, cupboard to mature before using.

Once opened, store in the refrigerator. This relish is typically served with meat or fish dishes. It can be served either cold, or warmed up by heating in a frying pan.
