This is a creamy cheese sauce meant as a dipping sauce for nachos. It’s also great for dipping chips, pretzels and thin toasts in. I also use it for drizzling over tacos and fajitas to make them extra indulgent.

Ingredients:

225g freshly grated extra-mature cheddar cheese
115g freshly grated pepper jack cheese
1½ tbsp cornflour
340g evaporated milk (unsweetened)
2 tsp hot sauce

Method:

Set a medium-sized, heavy-based pan over low heat.

In the meantime, toss together the grated cheeses and cornflour in a bowl.

Add the cheese mixture to the pan and immediately pour in the evaporated milk and your choice of hot sauce.

Heat the mixture, whisking constantly until the cheese has melted and the sauce has thickened to your liking.

If the mixture thickens too much add a little extra evaporated milk.

Serve immediately.
