This is a classic peanut-based stuffing from Malawi that's traditionally used with chicken or guinea fowl prior either to oven roasting or cooking in a cradle on a spit or on a barbecue.

Ingredients:

175g roasted peanuts
30g fresh breadcrumbs
100g butter, melted
1 onion
1 egg
2 dried chillies, crushed in a mortar
salt and freshly-ground black pepper, to taste

Method:

Coarsely chip the peanuts, dice the onion finely and combine in a bowl. Mix in the dried chillies and season then add the breadcrumbs. Pour in the melted butter, mix to combine then add the egg to bring the ingredients together.

Use this mixture to stuff your bird (both neck and body cavity) before cooking.
