This base recipe for a roasted peanut butter ends up in a whole range of Malawian recipes from biscuits to stews. As such it counts as one of the national ingredients of the country.

Ingredients:

150g of roasted peanuts
1-2 tbsp water (as required)
1 tsp salt
1 tsp chillies, minced
1 tsp garlic powder
1 tsp lemon juice

Method:

Put the roasted peanuts in a food processor then add in the salt, chillies, garlic powder and lemon juice.

Pulse to chop the peanuts then run the motor until you have a smooth paste. Add a little water, as needed, until you have a spreadable consistency.

Serve the Mtedza butter in a bowl and enjoy it with bread or vegetables (or use in any Malawian recipe that calls for peanut butter).
