Mexican Red Sauce

Mexican Red Sauce is a traditional American recipe for a classic Mexican-inspired red sauce made from a tomato base with bell peppers, carrots, chillies and herbs that can be used as a pizza topping or as a base for other sauces. Ingredients:

750g tinned tomatoes
180g tomato purée
1 medium onion, chopped
120ml water
60ml olive oil
2 garlic cloves, crushed
1 tsp lemon juice
35g green bell pepper, chopped
2 carrots, peeled and chopped
1 medium jalapeño chilli, chopped
1 tbsp ground cumin
1 tsp dried oregano, crumbled
1 tsp hot chilli powder
1 tsp paprika
2 tbsp brown sugar
2 tbsp runny honey

Method:

Combine all the ingredients in a food processor or blender and process until smooth. Pour the resultant sauce into a large pan, bring to a boil then reduce to a simmer and cook gently for 20 minutes.

Take off the heat and allow to cool then pour into jars and covering. Chill completely then store in the refrigerator until needed.

This makes an excellent topping for pizzas, or a base for pasta sauces.
