Tong Sui (the name literally means 'sugar water') are traditional Chinese dessert soups that can be very variable in terms of contents. This recipe calls for dried longan. Longan is a relative of lychee which is larger and rounder. You can substitute dried lychees for the longan. In the original, Longan Tong Sui is: .
Ingredients:
75g (3 oz) dried longan
1.5l (6 cups) water
6 dried red dates
12 ginkgo nuts (tinned are fine)
5 pieces snow fungus (soaked in cold water until soft and split)
sugar, to taste (but note that the soup needs to be sweet)
Method:
Pour the water into a pan and bring to a boil. Add the dried fruit, ginkgo nuts and snow fungus then reduce to a slow boil and cook for about 35 minutes, or until the liquid turns a ruddy brown.
Add sugar to taste and take off the heat.
Like all tong sui, this soup can be served warm, or chilled with ice cubes.
