Kvasivska Selianska (Village Soup)

Ingredients:

500ml beef (or pork) stock
240ml sour cream
1 egg
2 tbsp plain flour
150g coked potatoes, mashed
1 tsp fresh dill, chopped
500ml sauerkraut juice
120ml rye bread croutons

Method:

Add the stock to a pan and bring to a low boil then add the sauerkraut juice. In the meantime, blend together the sour cream, flour and egg in a bowl. Add some of the boiling stock to the egg mix to temper then pour this into the pan and whisk to combine. Simmer for 4 minutes to thicken then add the mashed potato. Stir to combine then sprinkle in the dill.

Cook for 3 minutes more then divide between 6 warmed soup bowls, garnish with the croutons and serve.
