Kelewele

Ingredients:

4 ripe plantains
lemon juice
4 tsp ground ginger
4 tsp cayenne pepper
oil for frying

Method:

Peel the plantains and cut into thick slices. Sprinkle each piece with lemon juice to prevent it from browning.

Mix the ginger and cayenne pepper in a bowl. Heat oil in a frying pan. Roll the plantain slices in the spice mixture to coat then add to the hot oil.

Fry the plantains until they are crisp and golden. Remove with a slotted spoon, drain on kitchen paper and serve immediately.
