Home-made Quick Gochujang (Quick Korean Chilli Paste)
Home-made Quick Gochujang (Quick Korean Chilli Paste) is a traditional Korean recipe for a classic quick method of creating a spicy chilli paste using gochugaru, honey, miso paste, sake and rice vinegar. This recipe, as with all authentic recipes calls for gochugaru chilli flakes. This is now widely available online and in Korean and other oriental supermarkets. If you simply can’t get it, then at a pinch you can substitute 10g crushed chilli flakes blended with 1 tsp sweet (not smoked) paprika. This is the ‘quick’ version of the sauce as it’s not fermented. Ingredients:
25g (1/4 cup) gochugaru (Korean chilli pepper flakes)
80ml (1/3 cup) water
2 tbsp runny honey
3 tbsp red miso paste (readily available on-line)
1 1/2 tbsp sake
1/2 tsp rice vinegar
1/4 tsp salt
Method:
Combine the gochugaru, water, honey, and miso paste in a small pan and stir over medium heat until the mixture comes to a simmer. At this point take off the heat and set aside for 15 minutes.
Stir in the sake, vinegar and salt, then scrape the mixture to a bowl. Let cool to room temperature then transfer to a jar.
