Halloween Meatloaf Mice is a traditional American recipe for a classic Halloween dish of mice made from meatloaf mix with carrots for east and tails and raisins for eyes that are served on a bed of spaghetti sauce. Ingredients:
For the Meatloaf:
120ml tomato ketchup (or your favourite catsup)
2 egg whites, beaten
175g minced (ground) turkey
175g minced (ground) beef
1 onion, finely chopped
75g oatmeal
salt and freshly-ground black pepper, to taste
For the Garnish:
carrots
uncooked spaghetti
raisins spaghetti sauce
cooked peas
Method:
Mix together all the ingredients for the meatloaf then shape into small mouse-shaped loaves. Arrange these on a greased baking tray then transfer to an oven pre-heated to 170°C and bake for about 45 minutes, or until the mice are nicely coloured and cooked through.
In the meantime, cut two rounds from the carrots for each mouse (these are the ears). Cut the remaining carrots into long, thin, strips (you need 1 of these for each mouse as the tail). Steam the carrot pieces for about 6 to 8 minutes, or until just crisp-tender (do not over-cook).
When the mice are done, remove from the oven and allow to cool slightly. Cut little slits for the ears about 1/2 of the way from the pointed end of each mouse body. Place one of the carrot rounds into each slit to form the ears. Now make a small slit in the rounded back end of the mouse and insert on of the carrot tail pieces into this.
Use the raisins or peas to form eyes, then break the spaghetti into short pieces and insert these at the nose (pointed) end for whiskers.
Warm up about 400ml spaghetti sauce. Divide the sauce between four plates, sit the mice on top and serve.
If desired you can serve the mice on a bed of mashed potatoes or spaghetti topped with the pasta sauce.
