An easy tapanade recipe with a few seaweed twists, adding depth of flavour, that umami hit and a nutrition boost. Note that Japanese wireweed is native to the Pacific ocean, but is an introduced and invasive species on the south coast of the UK, What better way to help control it than to eat it?

Ingredients:

125g jarred pitted green olives (drained)
1 tbsp capers
1 garlic clove
4 tbsp extra-virgin olive oil
1 tsp lemon juice
1 tsp ground bladderwrack (Fucus vesiculosus) or egg wrack (Ascophyllum nodosum)
1 tsp ground gutweed (Ulva intestinalis)
1 tsp wireweed (Sargassum muticum)

Method:

Simply combine all the ingredients in a food processor or blender. Pulse to chop then whizz until you have a smooth pulp.

Turn into a bowl and set aside in the refrigerator for at least 2 hours for the flavours to develop.

Serve accompanied by fresh bread or toast. It can also be used to mix into rice as a flavouring or use as an interesting pizza topping.
