Govjadina Stroganov (Beef Stroganoff)

Ingredients:

2 tbsp plain flour
salt and freshly-ground black pepper, to taste
900g sirloin top roast, cut into thin strips (about 2.5cm wide)
5 tbsp butter
1 medium onion, chopped
115g small button mushrooms
240ml tomato sauce (passata)
1 bay leaf
240ml sour cream

Method:

Season the flour to taste then add the beef strips and toss to coat evenly. In the meantime melt 2 tbsp of the butter in a large frying pan (or skillet) over medium heat. Add the onion and cook for about 5 minutes (or until just translucent) then add the mushrooms and cook for a further 3 minutes. Remove from the pan with a slotted spoon and set aside.

Add the remaining butter to the pan then add the floured beef and fry until lightly browned all over. Turn the beef mix into an oven-proof casserole then mix with the onions and mushrooms. Add the bay leaf then stir in the tomato sauce. Cover tightly with a lid then transfer to an oven pre-heated to 170°C and bake for 60 minutes, or until the meat is just tender.

Remove from the oven and just before serving stir-in the sour cream. Serve with potatoes, rice or noodles.
