Gambian chicken pepper soup with green habaneros in a tomato base

Ingredients:

1 tbsp ground black pepper
1 tbsp chilli powder
1 tsp salt
1 tsp garlic salt
2 Maggi chicken cubes
200g tomato purée
500g chicken pieces
2 whole, hot chillies (Scotch Bonnets, typically)

Method:

Place the chicken pieces in a large pot, cover with 1.5l water, bring to a boil and cook for 10 minutes.

Add the black pepper, chilli powder, salt, garlic salt and Maggi cubes. Bring back to a boil and cook for about 30 minutes, or until the liquid has reduced down to 500ml.

Add the tomato purée and the whole chillies. Bring back to a simmer and cook until the sauce is thick (about 10 minutes).

Serve hot, on a bed of rice.

In common with much of West Africa, Gambians believe that pepper soup is a sovereign remedy for a cold.
