Fried Ata Sauce

Ingredients:

2 onions, sliced and pounded to a paste
4 tomatoes, chopped and pounded to a paste
2 fresh hot chillies, chopped and pounded to a paste
6 tbsp palm oil
generous handful of minced dried prawns
4 sawa (bitterleaf) leaves (or 6 dandelion leaves if not available), finely shredded

Method:

Add the palm oil to a large frying pan then mix all the pounded ingredients together in a bowl and add to the oil. Fry for about 15 minutes until they have dried significantly then add the minced prawns.

Fry for another five minutes then take off the heat, stir-in the shredded bitterleaf and serve as an accompaniment to a main course.
