Ebadjea (Fresh Fish)

This is a very simple dish that really makes the most of good quality fish by simply steaming in a little lemon juice.

Ingredients:

1kg fresh fish
salt, to taste
black peppercorns, crushed, to taste
juice of 2 lemons

Method:

Clean and scale the fish then wash and pat dry with kitchen paper. Sprinkle liberally with salt then spread over some crushed black peppercorns.

Arrange the fish in a non-reactive dish then pour over the lemon juice. Marinate for a few minutes then turn the fish and the lemon juice into a pan. Cover and simmer gently for about 15 minutes, or until the fish is tender and flakes easily with a fork. During the cooking tine, add a little water from time to time, if the fish looks like it might be drying out.

Serve hot, accompanied by fufu, couscous, miondos or bantagas.
