Ingredients:

For the Fajitas:
2 duck breasts (skin on)
oil for frying
1 red onion, thinly sliced
1 yellow bell pepper, sliced
1 red bell pepper, sliced
2 red birds' eye chillies, chopped
generous pinch of cayenne pepper
dash of tequila

1 batch cherry salsa

To Serve:
flour tortillas
grated mild Cheddar or Monterey Jack cheese
lime wedges
chopped avocado

Method:

Score the skin on the duck breasts with a sharp knife then place skin-side down on a cold frying pan. Place over medium heat and cook for five minutes, tipping off any fat as it's released (reserve this for making roast potatoes). Turn the breasts over at this point and cook on the other side until golden brown in colour and almost cooked through (about 10 minutes). Remove from the pan, set on a warmed plate and put aside to rest.

Now prepare the cherry salsa according to the recipe. Heat a heavy-based frying pan on the hob until almost smoking. Slice the duck breasts into strips then add to the pan along with the onion, bell peppers, chillies, cayenne pepper and tequila. Cook, stirring constantly, until warmed through.

To serve, place a warmed tortilla on each serving plate then fill with the duck mixture. Serve with the salsa and top with some grated cheese and chopped avocado. Accompany with lime wedges.
