Ingredients:
180g chopped dates
80g chopped walnuts
3 drops vanilla extract
140g brown sugar
300g flour
1 tsp baking powder
1 tsp baking soda
180ml boiling water
Method:
Dissolve the baking soda in boiling water and soak dates in liquid. Cream together the egg and the sugar, add the vanilla and the dates (including liquid) and beat together. Sift-in the flour and baking powder and combine before pouring into a greased loaf tin and covering with baking paper.
Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 50 minutes until the loaf is well browned and set through.
