Cumberland Hot Dogs with Sweet Chilli and Tomato Relish

Cumberland Hot Dogs with Sweet Chilli and Tomato Relish is a modern British recipe for a classic dish of hot dogs made with Cumblerland sausages and baguettes that are topped with a home-made sweet chilli relish and which make an excellent and warming Bonfire Night treat. Ingredients:

For the Relish:
500g tomatoes, halved
4 garlic cloves
2 red chillies, stems removed
2cm length of fresh ginger, peeled and chopped
250g sugar
100ml red wine vinegar
1/2 tsp sea salt

8 Cumberland sausages
1/2 iceberg lettuce, finely shredded
2 baguettes, each sliced into 4 pieces and cut open

Method:

Begin with the relish. Combine half the tomatoes in a food processor with the chillies, garlic and ginger. Pulse until pureed then turn into a saucepan along with the sugar, vinegar and sea salt. Bring the mixture to a boil over low heat, stirring constantly. Chop the remaining tomatoes and add these to the pan then bring to a simmer and cook for about 45 minutes, or until the mixture is thick. stirring occasionally. Take off the heat and pour into a bowl then set aside to cool.

Cook the sausages for about 10 minutes under a grill pre-heated to medium, turning them occasionally. After this time brush each sausage with a little of the relish and continue cooking for a further 2 or 3 minutes, or until the sausages are thoroughly cooked and lightly glazed.

Open the baguettes lengthways then fill with the shredded lettuce. Place the sausage on top, add a generous dollop of the relish and serve.
