These classic Coney Island hot dogs (also known as Michigan hot dogs) are served with a rich meat sauce. Yellow mustard and onion bring bright contrast to the dish.
Ingredients:
675g lean minced beef (minced beef heart is best)
500ml water, or as needed
110g onion, diced
80ml ketchup
2 tbsp butter
2 garlic cloves, crushed
2 tbsp chilli powder, or more to taste
1 ½ tsp salt, or to taste
1 tsp freshly ground black pepper, or to taste
1 tsp ground cumin, or to taste
½ tsp celery salt, or to taste
pinch of cayenne pepper, or to taste
8 all-beef hot dogs
8 hot dog buns
4 tbsp prepared mild yellow mustard, or to taste
Method:
Combine the minced beef, water, 75g of the diced onion, ketchup, butter, garlic, chilli powder, salt, black pepper, cumin, celery salt, and cayenne pepper together in a saucepan. Mix with a potato masher or spatula over medium-high heat until mixture has a finely ground consistency and begins to bubble (about 10 minutes).
Bring beef mixture to a simmer, reduce heat to medium-low, and cook, stirring occasionally, until sauce thickens and reduces (about 1 hour). Season to taste with salt and freshly-ground black pepper.
Bring a large pan of water to a boil. Add the hot dogs and cook in the boiling water until heated through (5 to 7 minutes).
Pre-heat your oven to 180C. Arrange the hot dog buns on a baking tray, pop in the centre of your pre-heated oven and cook . Cook buns in the preheated for 2 to 3 minutes until warm.
Take the first bun and sit on a plate. Sit a hot dog in the bun and top with meat sauce. Drizzle yellow mustard and a portion of the remaining diced onion over the meat sauce. Repeat with remaining hot dogs.
Serve and enjoy.
Note that the meat sauce can be prepared in large batches before hand and then frozen. Which means it only needs to be re-heated when you're preparing the hot dogs.
