Here is a recipe that I found in the Good Fare Christmas pamphlet published in Edinburgh in 1958 that contains a number of Scottish Christmas and Hogmanay recipes.
This is a classic Scottish salad, intended to be served either as a starter or as an accompaniment to the Christmas turkey.
Ingredients:
500g brandied pears (or preserved pears with 1 tbsp brandy added to their juice)
75g chopped walnuts
225g cream cheese
1 tsp preserved pimentos, finely chopped
6 maraschino cherries
a few dried fruit (raisins, craisins, currants)
a few mint leaves
1 crisp lettuce
rocket leaves (if available)
mayonnaise
Method:
Halve the pears lengthways and remove the cores. Mix the cream cheese with the chopped pimento and fill the hollows in the pears with this. Press the two pear halves together to seal.
Roll each pear in the finely-chopped walnuts, then arrange the fruit on a bed of shredded lettuce. Garnish with the cherries, dried fruit and mint leaves.
Mix a little of the brandied syrup into the mayonnaise, and dress each pear with a tablespoon of this mixture.
