Considering it's location, it's hardly surprising that there is a significant Indian influence on the cuisine of Mauritius. This recipe is for a classic raw chutney made from tomatoes that, really, is more a salsa than anything else. The French name, referring to 'love apples' (tomatoes' original name in Europe) indicates that this dish goes back at least to the 18th century.

Ingredients:

5 tomatoes
1 onion, finely chopped
2 garlic cloves, crushed
2 small chillies, finely chopped
2 tbsp olive oil
salt and freshly-ground black pepper, to taste

Method:

Core and se-seed the tomatoes then cut the flesh into small dice. Combine in a bowl with the garlic, onion and chillies.

Mix in the oil, season to taste with salt and black pepper then set aside for at least 20 minutes to allow the flavours to develop.

Serve as an accompaniment to salads and grilled fish.
