Ingredients:

300g filo (phyllo) pastry
150g grated Feta cheese
150g grated Kasseri cheese
100g butter, melted
120ml Béchamel sauce
pinch of nutmeg
2 eggs

Method:

Pour the Béchamel sauce into a deep bowls then crack in the eggs one by one, mixing them in thoroughly after each addition. Now whisk in the cheeses and the nutmeg and ensure everything is completely blended.

Meanwhile unroll the filo pastry and cut into broad strips with a sharp knife. Brush one side of each strip with the melted butter then place a teaspoon of the cheese mix on each strip. Roll these up to form a small cylinder. Transfer the cheese rolls to a buttered baking sheet. Brush the rolls with the remaining melted butter then transfer to an oven pre-heated to 160°C and bake for about 15 minutes, or until golden. Serve hot.
