Boozy Barbecued Beef Steaks a Classic British recipe for a dish of beef steaks in a whisky, soy sauce, dark sugar and black pepper marinade that's cooked on a barbecue and served with tomatoes and garlic bread.

Ingredients:

4 beef steaks
4 tbsp whisky (or brandy)
2 tbsp soy sauce
1 tbsp dark muscovado sugar
freshly-ground black pepper, to taste
fresh parsley sprigs, to garnish

To Serve:
garlic bread
tomato slices


Method:

Make a few cuts in the fat on the sides of each steak (this prevents the meat from curling during cooking).

Arrange the meat in a shallow, non-reactive, dish. Combine the whisky (or brandy), soy sauce, sugar and black pepper in a small bowl. Whisk to combine, then pour over the meat. Turn the meat to coat evenly then cover the dish with clingfilm (plastic wrap) and set aside to marinate for at least 2 hours.

After this time, place the meat on the oiled rack of a barbecue set over hot coals and cook for about 2 minutes per side. Move the meat to the sides of the barbecue, where the heat is less intense and cook for between 4 and 10 minutes more per side (or until the meat is done to your linking).

Lightly barbecue the tomato slices for about 2 minutes. Transfer the meat and barbecued tomatoes to warm serving plates. Garnish each steak with a sprig of fresh mint. Serve accompanied by the garlic bread.
