Bolo de Carne (Brazilian Rolled Meatloaf)

Bolo de Carne (Brazilian Rolled Meatloaf) is a traditional Brazilian recipe for a dish of stir-fried pork tenderloin and mixed vegetables in a hoisin and sweet chilli base with chicken stock and sesame seeds. Ingredients:

For the Meatloaf:
1.5kg minced beef
250g smoked sausage, skinned and mashed with a fork
1 onion, grated
1 carrot, grated
2 garlic cloves, crushed
3 vegetable stock cubes, crushed
1 egg
90g fine oatmeal
salt and freshly-ground black pepper, to taste

For the Filling:
675g ricotta cheese, passed through a fine-meshed sieve
3 tbsp milk
salt and freshly-ground black pepper, to taste
250g spinach, cooked until wilted, drained and finely chopped

Method:

For the meatloaf, combine all the ingredients together in a bowl then turn onto a floured work surface and pat into an oblong.

Combine the filling ingredients in a bowl and mix well. Spread this over the meatloaf mix then roll up, Swiss (jelly) roll fashion along the small edge of the rectangle. Brush the roll with oil then sit on a greased baking tray. Grease a sheet of kitchen foil with oil and use this to cover the meatloaf roll.

Transfer to an oven pre-heated to 180°C and bake for 30 minutes. After this time, remove the foil and cook for about 10 minutes more, or until coloured.

Slice into rounds and serve.
