Arni Psito (Oven-baked Lamb)

This is a traditional Sunday dish in Cyprus and it's commonly served with home-baked bread.

Ingredients:

1 leg of lamb (about 2kg)
1kg large potatoes
120ml corn oil
100g lamb or beef fat
60ml lemon juice
500g ripe tomatoes, cut into large slices
120ml cold water
salt and freshly-ground black , to taste

Method:

Peel the potatoes, wash them well then cut into quarter, pat dry and arrange in the base of a pie dish. Wash the lamb, drain and pat dry then pour over it the lemon juice and arrange it amongst the potatoes.

Add the corn oil and dot with the fat then sprinkle liberally with salt and black pepper. Layer the tomato slices over the lamb then transfer to an oven pre-heated to 180°C and bake for about 100 minutes.

Once cooked, remove the lamb and transfer to a chopping block. Cover with foil and set aside to rest for 20 minutes. Slice the meat thinly and accompany with the potatoes.

Typically this is served with a mixed vegetable salad.
