Arni me kounouppidhi Mesaritico (Lamb with Cauliflower à la Mesaorias) is a traditional Cypriot recipe for a classic dish of marinated lamb cooked with cauliflowers. Ingredients:

1.5kg cauliflower florets
1kg lamb breast
100g onions, finely chopped
250ml corn oil
360ml dry red wine
salt and freshly-ground black pepper, to taste

Method:

Cut the lamb into medium-sized pieces and place in a bowl. Separate the cauliflower into florets by tearing, so that each floret has a piece of stalk attached. Set the cauliflower in a bowl with the meat.

Pour over the wine and set aside to marinate for about 90 minutes. After this time remove the cauliflower but leave the lamb in the marinade.

Heat the oil in the base of a casserole dish, add the onion and fry for about 5 minutes or until lightly browned. Add the cauliflower and fry briefly then transfer the mixture to a pie dish with a slotted spoon.

Drain the lamb, add to the oil remaining in the casserole and fry until lightly browned then pour over the marinade wine. Bring the mixture to a boil, add the hot water and season to taste. Reduce to a simmer and cook, covered, for 60 minutes.

At this point add the cauliflower mixture (arrange the cauliflower so that the florets face upwards) along with 250ml water. Continue cooking for 30 minutes more, or until the cauliflower is tender.

Serve hot, accompanied by thickly-sliced vegetables.
