Ingredients:
250g egusi (melon) seeds (or substitute pumpkin seeds)
250g beans
1 large onion, diced
1 fresh chilli, diced
salt to taste
groundnut-oil for frying
Method:
Soak the beans in cold water for 2 hours then wash and rub together to remove the skins. Place the skins with the melon seeds and grind to a smooth paste. Place in a clean bowl and add a little water. Beat together until light and fluffy (add a little more water if necessary) then add the diced onion and chilli. Season with salt.
Heat the groundnut oil in a pan and spoon the mixture into the oil. Fry until golden brown, turning once. Drain and serve immediately.
