This is the local form of accent seasoning in Montserrat and elsewhere in the Caribbean. It's either the commercial accent seasoning or a local home-made version sans the MSG and anti-caking agents. The salt is also significantly released in this version for the seasoning version there would have been 270g salt, but here I'm using just 100g fine sea salt as a base..
Ingredients:
100g fine sea salt (this is your base)
1 tsp ground bay leaf
1 tsp ground black pepper
1/2 tbsp dried thyme, ground
1 tbsp oregano, crumbled
1 tbsp dried basil, crumbled
2 tsp smoked paprika powder
2 tbsp garlic powder
2 tbsp onion powder
1 tsp ground cumin seeds
Method:
Mix the sea salt base with the other ingredients: bay leaf, black pepper, thyme, oregano, basil, smoked paprika powder, garlic powder, onion powder and ground cumin seeds.
