These recipes, all contain Sweat as a major wild food ingredient.

Sweating is the process of cooking vegetables (typically onions) very slowly in a covered pan generally using only a very small amount of butter or oil so that the vegetables effectively steam in their own liquids. This way the vegetables soften without browning. Sweating plays an important part in tenderising vegetables, especially finely diced onions, before other ingredients are added.
