Ingredients:

500g (1 lb) goat meat
3 lemon slices
3 whole cloves garlic
2 tbsp white wine vinegar
1/2 tsp salt
2 tbsp pure vegetable oil
1/2 small onion, chopped
3 large tomatoes, chopped

Method:

Cut and wash your goat meat then add enough water to just cover it. Add the garlic, lemon slices, dried thyme, salt and white wine vinegar.

Bring everything to a boil then reduce the heat to medium high and cook the meat until tender (about 30 minutes). At this point remove and discard the lemon.

Add the vegetable oil and fry until meat begins to brown. At this point add the chopped onion and sweat for about 2 minutes. Now add the tomatoes and cook for 3 minutes.

Reduce heat to a gentle simmer and let everything simmer for about 3-5 minutes.

The stew is now ready.
