This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Sushi recipes added to this site.
These recipes, all contain Sushi as a major wild food ingredient.
Sushi (寿司?) is a classic example of Japanese cuisine made from vinegared rice combined with seafood or vegetables. Most, but not all, of the fish used in sushi is raw, but other ingredients may be cooked, blanched, sautéed, or marinated. In English usage 'sushi' has come to mean a complete dish with rice and toppings; however, the original Japanese term sushi (-zushi in some compounds such as makizushi), written in kanji, means snack and refers to the rice and not to the fish or other toppings.
There are various types of Sushi:
Sushi is generally served with soy sauce, wasabi paste, gari (sweet pickled ginger) and ocha green tea.

- Sushi served rolled in nori is called maki 'rolls'.
- Sushi made with toppings laid with hand-formed clumps of rice is called nigiri
- Toppings stuffed into a small pouch of fried tofu called inari
- Toppings served scattered over a bowl of sushi rice is called chirashi-zushi
