These recipes, all contain Noisette as a major wild food ingredient.

Noisette is a French word that literally means 'nut'. It is often used for 'nut brown' as in Beurre noisette. It is also used for hazelnut so that a noisette in confectionary is anything that has hazelnut in it. Also pommes noisettes, for example, are hazelnut-sized balls of potato, cut with a melon baller, lightly fried and browned in butter. Noisettes are also the small rounds cut from a boneless rack of lamb.
