Lamb Noisettes with Bilberries

Ingredients:

4 lamb noisettes
olive oil
salt and black pepper, to taste
250ml red wine
2 sprigs fresh thyme
200ml lamb stock
50g bilberries (or blueberries)

Method:

Rub the lamb all over with the olive oil, season lightly the place in a hot frying pan. Fry for 2 minutes per side (do not move the lamb whilst frying) then transfer to a warm plate and allow to rest for about 5 minutes before serving.

In the meantime, add the red wine and thyme to the frying pan, stirring well to pick-up the lamb residue. Add the lamb stock and continue cooking on high heat until the sauce reduces and thickens. Now add the blueberries and season to taste. When the blueberries are soft pass the sauce through a fine-meshed sieve, pushing through with the back of a spoon and serve with the lamb.
