This is a classic Chinese sauce made from a mixture of soya beans, vinegar, sugar, garlic, chilli peppers and various spices. It has a characteristic rust-brown colour and a sweet and spicy flavour. It is generally used either as a condiment or as a sauce for meat, poultry or shellfish dishes.
