A large number of recipes in
Apicius call for
oneogarum (wine sauce). The name literally means 'wine with fish sauce'. Several recipes are given in
De Re Coquinaria, but this is a general recipe that can be used almost anywhere.

Method:
Whisk together the wine and liquamen in a bowl. Beat in olive oil to taste and serve.
