Melcas: cum piper et liquamen, vel sale, oleo et coriandro.

Translation


Cheese Sweetened with Honey: [Serve] with pepper and liquamen, or with salt, oil and coriander.

Modern Redaction

Ingredients:

200g feta cheese, crumbled
2 tbsp honey
2 tbsp liquamen (fish sauce)
1/2 tsp freshly-ground black pepper
2 tbsp coriander leaves, finely chopped

Method:

Crumble the feta cheese in a bowl then warm the honey, pour over the cheese and toss to coat then set aside to cool

In a small bowl, whisk together the liquamen, black pepper and coriander leaves. Pour over the honeyed cheese and toss to combine. Serve immediately.

Alternatively, whip together the feta cheese and hot honey to a smooth paste. Sit in a bowl or on a plate, drizzle over a blend of honey and liquamen, garnish with plenty of black pepper and serve.
