Lactucas (from Apicius' De Re Coquinaria) III, xviii, 2


Lactucas cum oxyporio et aceto et modico liquamine.

Translation


Serve lettuce with oxyporum, vinegar and a little liquamen.

Modern Redaction

Ingredients:

lettuce leaves
3 tbsp oxyporum
2 tbsp white wine vinegar
1 tsp fish sauce (liquamen)

Method:

Whisk together the oxyproum, vinegar and fish sauce to make the dressing. Wash and dry the lettuce leaves, arrange in a salad bowl, pour over the dressing, toss to combine and serve.

If desired, you can garnish with a little coarsely-ground black pepper.
