Of Octopus: Serve with pepper, liquamen and laser.

Modern Redaction

Ingredients:

1kg octopus meat

For the Seasonings:
1 tbsp liquamen (fish sauce)
1/2 tsp freshly-ground black pepper
pinch of asafoetida

Method:

Clean the octopus and pound the meat with a mallet to tenderize. Cut the octopus into pieces and either flash fry or boil in salted water until tender (10 minutes to 2 hours, depending on cooking method).

Drain the octopus, arrange on a serving dish and season with freshly-ground black pepper and asafoetida powder. Drizzle over the fish sauce and serve.
