In Lolligine in Patina (from Apicius' De Re Coquinaria) IX, iii, 1


In lolligine in patina: teres piper, rutam, mel modicum, liquamen, caroenum, olei guttas.

Translation


A Dish of Squid: Mix pepper, rue, a little honey, liquamen, caroenum and drops of olive oil.

Modern Redaction

Ingredients:

500g squid, cleaned and sliced into pieces
2 tbsp olive oil

For the Sauce:
1/2 tsp freshly-ground black pepper
1/4 tsp rue (or rosemary)
1 tsp honey
250ml fish stock
caroenum
1 tsp olive oil

Method:

Begin with the sauce. Pound together the black pepper and rue (or rosemary) in a mortar then work in the honey, fish stock, caroenum and 1 tsp olive oil. Turn into a bowl and set aside.

In the meantime, heat the 2 tbsp olive oil in a pan. Add the squid pieces and fry for about 2 minutes. At his point pour over the sauce, bring to a simmer, cover the pan and cook very gently for about 40 minutes.

Serve hot.
