Aliter Tubera IV (Truffles, Another Way IV)
Aliter Tubera (Truffles, Another Way) is a traditional Ancient Roman recipe for a classic dish of truffles that are boiled with leeks and served in a salt, pepper, coriander and oil sauce. Original Recipe
Aliter tubera: elixa cum porro, deinde sale, piper, coriandro conciso, mero, oleo modico inferes.
Translation
Truffles, Another Way: Boil with leeks and serve in [a sauce of] salt, pepper, chopped coriander and a little oil.
Modern Redaction
Ingredients:
truffles, peeled
3 leeks, cut into 2cm lengths
250ml water
For the Sauce:
1/4 tsp freshly-ground
black pepper
1/4 tsp sea salt
1 tbsp
coriander (cilantro) leaves, finely chopped
100ml white wine
1 tbsp olive oil
Method:
Peel the truffles, slice thickly then combine in a pan with the leeks and water. Bring to a boil then take off the heat and drain (reserve the stock).
Combine the truffle cooking stock, white wine and oil in a pan then whisk in the black pepper, sea salt and coriander leaves. Bring to a boil then add the truffles and leeks. Return to a simmer and cook for 5 minutes then turn into a dish and serve.
