Aliter Tubera (Truffles, Another Way) is a traditional Ancient Roman recipe for a classic dish of truffles that are boiled with leeks and served in a salt, pepper, coriander and oil sauce. Peel the truffles, slice thickly then combine in a pan with the leeks and water. Bring to a boil then take off the heat and drain (reserve the stock).
Combine the truffle cooking stock, white wine and oil in a pan then whisk in the black pepper, sea salt and coriander leaves. Bring to a boil then add the truffles and leeks. Return to a simmer and cook for 5 minutes then turn into a dish and serve.
