Aliter tubera: piper, mentam, rutam, mel, oleum, vinum modicum. calefacies et inferes.

Translation


Truffles, Another Way: Simmer in pepper, mint, rue, honey, oil an a little wine. Serve.

Modern Redaction

Ingredients:

truffles, peeled

For the Sauce:
1/4 tsp freshly-ground black pepper
1 sprig of mint, finely chopped
pinch of rue (or rosemary)
2 tsp honey
120ml white wine
1 tbsp olive oil

Method:

Peel the truffles, pierce with a skewer and set aside. In the meantime, grind together the black pepper, mint and rue (or rosemary) in a mortar. Work in the honey, olive oil and wine then turn into a pan.

Bring to a simmer then add the truffles and cook for 10 minutes, or until the truffles are cooked through and saturated in the sauce. Turn into a bowl and serve immediately.
