Aliter ofellas: ofellae prius sale et cumino infusae in aquam recte friguntur.

Translation


Starters, Another Way: Soak pieces of meat in water, having sprinkled them beforehand with salt and cumin. Then fry them carefully

Modern Redaction

Ingredients:

500g good quality cut of pork (eg fillet, loin), cut into 5cm cubes
1 tsp salt
1 1/2 tsp ground cumin
oil for frying

Method:

Place the meat in a bowl. Combine the salt and cumin and sprinkle over the meat. Toss to coat and set aside to marinate for 30 minutes. Pour over enough water just to cover then set aside to soak for 2 hours.

After this time, heat olive oil in a pan. Drain the meat, add to the pan and fry gently until nicely browned and cooked through. Serve immediately.
