Aliter betas elixas: ex sinapi, oleo modico et aceto bene inferuntur.
Translation
Another: Stewed Beets: They are good served with mustard, a little olive oil and vinegar.
Modern Redaction
Ingredients:
4 medium beetroot
2 tbsp
mustard seeds
For the Dressing:
120ml olive oil
3 tbs vinegar
1/2 tsp mustard powder
Method:
Wash the beetroot thoroughly, but do not peel. Place in a pan with the mustard seeds and cover with plenty of water. Bring to a boil, cover and cook for about 40 minutes, or until the beetroot are tender. Take off the heat and allow to cool in the water.
Once the beetroot are cold peel them then slice into rounds. Arrange these in a non-reactive bowl. Whisk together the vinegar and mustard powder until smooth then whisk in the olive oil. Pour over the beetroots, cover with clingfilm and chill in the refrigerator before serving.
